Raspberry Coconut Shaved Ice Recipe


Ice, Ice, Baby.

After a day of swimming floaties and doggy paddles, it is hard to resist a shaved ice treat. Unfortunately, they are usually drenched in unhealthy syrups that are loaded with sugar, artificial flavors, and dyes. You can chill out with this recipe, knowing that your little is getting essential nutrients along with a delectable dessert.

Frozen raspberries are the star of this cool confection. Raspberries are loaded with antioxidants, vitamin C, and fiber. Babies are more likely to become constipated once they are introduced to solid foods, which makes fiber an important part of your mini’s diet. But it doesn’t just help blocked-up babies, it increases feelings of fullness, lowers cholesterol, and prevents heart disease and diabetes.

We blend the raspberries together with coconut milk, which is an excellent source of niacin, iron, and copper. It is also rich in lauric acid, which is what gives breast milk its ability to fight off infections.

Ingredients

  • 4 pints of fresh raspberries (1 kg)
  • 2 13.5oz cans coconut milk (2 398ml cans)
  • 1/4 cup maple syrup (80ml)
  • Dash of pink sea salt
  • 1 teaspoon vanilla extract

Method

  1. Put all of your raspberries into a blender and blend until smooth.
  2. Run the pureed raspberries through a sieve to remove the seeds. If you like the texture, you can skip this step.
  3. Put the strained raspberry puree back into the blender. Add in the coconut milk, maple syrup, sea salt, and vanilla extract.
  4. Blend for approximately 30 seconds, then transfer the mixture to a deep baking sheet or Tupperware dish.
  5. Place the mixture in the freezer for 1-2 hours, until completely frozen.
  6. Remove the sheet pan from the freezer and let it sit at room temperature for 5-10 minutes, until you’re able to scrape off layers to make shaved ice.
